Edible Flowers

Edible flowers are one of our favorite specialty crops that we've been growing in the farm & nursery for a few years now. Theres nothing more romantic than visiting your garden to grab a few edible blooms to sprinkle atop your salad or use as a garnish on your charcuterie board. Fun edible flower tip: the more you harvest the tender blossoms the more your plant will produce, so don't be shy about picking & eating once your plants get going. Edible flowers can be dehydrated, pressed, candied, frozen into ice cubes for fun drinks, or used fresh for flavor, decoration & dye.

Jewel Mix Nasturtiums
Tropaeolum minus

Southern Exposure Seed Exchange
20 seeds per packet

days to maturity: 55-65 days
plant spacing: 1 per square foot
sunlight requirements: 8-14 hours
look out for: overwatering and not enough drainage (they like it dry)
harvest notes: harvest all parts of the plant when needed. leaves, seeds, flowers
annual

Nasturtiums are a great plant to have in your edible garden not just because they are beautiful but because they are also super delicious and useful. In Thailand, the blue flowers are traditionally used to make purple rice, which you do by making your rice with a handful of the flowers and then adding a splash of citrus, usually lime to change the color to purple. This is a super fun way to add color to your diet and include kids in the kitchen. Raising the pH of the water (usually by adding lemon juice) makes the infusion go from blue to purple. You can also infuse these flowers in coconut milk to make sweet blue tinted deserts, or throw your daily harvest of flowers into a bottle of liquor to turn it blue.

Although the seed pod is not edible, we love growing Clitoria in gardens and at the farm, allowing it to climb up any unused fence space and produce beautiful edible & medicinal bright blue flowers. Butterfly pea vine starts its growth slowly but then ramps up during the hottest months of the year, growing quickly and flowering profusely. We harvest the flowers daily for sale to chefs and to dry for teas and we are amazed when we come back to one mature plant day after day and find it full of flowers; the amount of flowers one plant can produce is astounding. Leave a few flowers on your plant to get pollinated and make brown seed pods and you’ll have plenty of pea vine seeds for next season. If you don’t get around to harvesting all of your seed pods they will burst open at maturity and self seed easily. If you have a large drift of plants, shearing them by 1/3 would be an easier option than deadheading. They will set new buds quickly. Due to the humidity of our tropical climate Lavender wont act as a perennial plant here in South Florida, so we are growing a variety that flowers in its first year as an annual plant. We learned about this Florida friendly variety from farmer Mike at Ground Floor Farm in Stuart. He grows this every year and has great success with it until the summer months come and kill all of his plants! Besides being deliciously scented, lavender is also medicinal when used internally either as a tea or edible flower. Lavender is believed to have antiseptic and anti inflammatory properties, and when used topically it can help heal cuts and insect bites. In addition to helping with digestive problems lavender is used to help relieve pain from headaches, sprains, toothaches and sores. Since lavender is a mediterranean herb keep yours nice and dry and give it well draining soil. Just like we say with our rosemary plants “treat it like its living in Italy” by keeping the well draining soil nice and dry and watering just the soil, not the entire plant, because it likes having its leaves dry. Harvest blooms often to keep new blooms forming, and don’t ignore the leaves, they are just as fragrant as the flowers.

Dianthus
Caryophyllaceae

days to maturity: 90 - 100 days
plant spacing: 4 Plants per Square Foot
sunlight requirement: 6 - 14 Hours
look out for: spider mites and aphids
harvest notes: harvest often and deadhead
annual

Dianthus is a genus of about 300 species that includes the super popular “carnarion” and sweet williams. Pentas develop sparkling star- shaped flowers all summer and winter long in bold hues of red, white, lavender, purple, or pink. Pentas is a sun lover that grows 18 to 36 inches tall and when you harvest the flower clusters often it will flower prolifically. In most parts of the country, pentas is considered an annual, but in very warm regions like ours, pentas is perennial . We first started to see this flower referred too as “edible” by the most famous garnish and specialty crop farm in North America called “Chefs Garden”, in Ohio. They call it “Egyptian star flower” maybe to fancy it up before selling it to the fanciest chefs in America.... and we were excited to learn that our plain old beautiful common pentas flower were technically edible. Another reason to get excited about growing begonias in your garden? THEY LIKE THE SHADE! yes, you heard me right... a flowering plant that likes the shade is a rarity indeed. Be forewarned, they don't like deep shade, so a garden that gets early morning or late day sunlight is ideal. We've purchased a variety of begonias from a local grower for you to choose from. Starting begonia from seed can be quite challenging so if you do want to propagate these you need to do it from stem cuttings. First off, the whole plant is edible; the leaves can be used fresh in salads, the flowers are edible, beautiful and spicy, and the fresh green seeds can be eaten fresh or pickled like capers. On top of that, the whole plant is beautiful and highly ornamental in the garden. The large lily pad shaped leaves stick straight up making a mounding type growth pattern, and if allowed to trail it’ll hang out of baskets or off of the side of your raised bed. One thing people tend to get wrong with nasturtium plants is overwatering them. They are considered an invasive species in California, the driest place in America! So consider that fact when choosing soil type and plant location in your garden. They need to have very well draining soil and very little water in order to thrive and produce flowers and large happy plants through the winter season.

We sell nasturtiums in 6 packs because they are commonly used to fill in spaces under plants like tomatoes and and planted along edges so they can spill over the sides of raised beds and out of pots. Snapdragons are some of the few cut flower varieties that are actually grown commercially in South Florida, but we hadn't messed with them much until recently. They take a long time to grow and prefer a lengthening day (so planting after December 21st) but they are so beautiful and productive that they are clearly worth the wait. Like many other cut flowers your snapdragons with produce more bushy plants with more blooms if you "pinch" them when young. To do this, cut about 1/2 of the growth off of the plant once you take it home and transplant it. This might seem crazy since itll make the plant smaller and you might be afraid of hurting it, but many plants do better when they are "pinched", including celosias, zinnias, peppers, and hibiscus varieties like roselle.
