Inside, they’re creamy white like a traditional russet. And yet, they’re undeniably sweet, with a subtle hint of chestnut flavor. The purple beauty’s soft white flesh is loaded with vitamin C and dietary fiber. Best of all, Murasaki is resistant to both southern root-knot nematode and Fusarium root rot, which is a big deal for South Florida Summer growing.

Sweet potatoes are great summer crops for your raised bed or your food forest just make sure your raised bed doesn't have much else in it since these plants really spread out! Sweet potatoes will thrive relatively pest free (check the underside of the leaves often for whitefly) and don't mind the heat, humidity and rainfall of summer. They are a very diverse food crop as the leaves can be eaten cooked and then you get a root crop! Fun fact: the more you prune your sweet potato plant above ground (by harvesting and eating the leaves) the more energy your plant will put into making you roots, so by harvesting (and eating) your greens you are also helping increase your root harvest yield.
