Bok choi or pak choi is a type of Chinese cabbage. Chinensis varieties do not form heads like lettuce; instead, they have smooth, dark green leaf blades forming a cluster reminiscent of mustard or celery. You can either harvest the exterior leaves as needed or wait until your choi is mature to harvest the whole plant. For baby types like this we love harvesting them as whole heads because they’re so cute and mini even when fully grown, and you can cut the plant in half lengthwise and treat the tender halves like little vegetables in the kitchen.
Bok Choi and other asian greens are easy crops to grow in south florida gardens, as they don't mind the heat and mature quickly for early harvest. Space plants about 6 inches apart for mature head harvest or you can direct seed densely in your garden for cut and come again baby leaf harvest, like you would lettuce or arugula.

Plant Care
Plant Care
When your plant delivery arrives, make sure you water your new plants thoroughly with a light spray of water (none of this thumb over the hose stuff). We recommend planting them within 10 days of receiving them. If you do intent to wait to plant them, we recommend placing them in a shallow reservoir (like a baking pan) and filling it with half an inch of water so they can drink the water from below while you are at work and place them in an area with plenty of sun. When planting in your garden always add a dash of Organic granular fertilizer, and give them extra water during their first week in their new home, while they adjust. We recommend disturbing the root ball as little as possible during planting.
